I just purchased a new 12" cast iron skillet and the label on it claims that it's "seasoned, ready-to-use." Naturally, I'm suspicious. How can I be sure that it really is seasoned correctly? Should I season it myself just to be sure?

If I scramble eggs in the iron cast skillet, little black particles end up in the eggs. Is it just too old? "1890" is stamped on the bottom of the pan. I'm not sure if that is when it was made since I purchased it at a second hand store.

My husband has just relocated his cast iron skillet, but it looks like it was never cleaned the last time he cooked in it. He has put dawn detergent and water in it and boiled it but it is still just a thick sludge that won't budge. Is this skillet hopeless or will a little bit of elbow grease help? Any other "tricks" would be greatly appreciated.

I've seen a lot of recipes lately that insist on a a cast iron skillet. Why? My cheap Walmart Teflon pans seem to do the job just fine.
