When I was a child my mom would make a large biscuit in a cast iron pan in the oven. She called it a hoecake..I tried to find a recipe for this but came up with recipes with cornmeal in them. I know that she didn't add cornmeal...does anyone have a recipe for a hoecake or something similar?

Here is a link to cast iron cooking..have fun.
Hoecakes are cornmeal-based pancakes, usually fried on the flat end of a hoe over a fire, w/ nothing more than lard, cornmeal, hot water, and a little salt. Nowadays, they are called “hot water cornbread” and are like little pancakes, cooked in a cast iron skillet coated w/ a bit of oil.
I think you’d better just search for “biscuit” rather than hoecake. What your mom made was really not a hoecake, even though that’s what she called it.
Hoe cakes are thin corn bread batter fried as pan cakes…
As for the biscuit…it sounds like a pan cake.
